The brown wires are generally grounds.  Not sure about the big plug, but if there is not a mate lying around it may have been to a radio.  Should be able to find a wiring diagram online.

I'd say the plug goes to the ignition module under the tank that sits under the wedge in the frame.

The plug is for a OEM alarm and immobilizer system.

You need to bridge contact 10 and 12 together (both is brown/red) to get the starter to function

You're starting from behind the 8-ball.  You have very non-standard wiring and connectors, lots of apparent modifications and additions and it's not a good sign when you have toasted wires.  There may be mayhem resulting from that incident going on inside the harness.  The brown wires terminating in 1/4" female and male spade connectors may be associated with the OEM alarm (can't say for sure having never seen an installed alarm) but they are non-standard for a stock K75.  I can see Scotchlok IDC connectors (which are bad news) that indicate PO additions.

Start by tracing back that burnt wire.  If it disappears into the harness, then you'll probably have to start dismantling the harness to see where it goes and what collateral damage it has wreaked.  If you can discern an insulation colour code, then report it here and we can probably help identify what it is.

The round white one is for an earlier version factory alarm than the harness you allready have removed,
the round black one is for other optional extras.

one of them goose to another jack connect on the side

That's a power jack for external accessories, or it can be used for connecting a battery tender.

Non OEM, but a smart upgrade..........exept when/if you get welded starter relay contacts.
