Looks like I'll be starting with replacing a few things. The bike sat for at least a year before I bought it. So I'll start with a new thermostat, and some seals/gaskets.

If the breather Z-hose is cracked then that is why you are running crappy below 5k.

I've got a new one on its way, should be here on friday. I've been riding it daily to get more familiar with it.

Obviously replacing the crank hose will help things along, but I've noticed that it only struggles when the bike is stone cold. Consistently, I've found that if i just let it idle long enough for it to start warming up past the blue in the temp gauge it will run great. So I'm thinking I need to test the coolant temperature sender. I understand that it sends out 2 signals; 1 goes to the computer and the other to the fan. Which raises a question:

The previous owner cut the purple wire to the fan to wire in a manual switch. I've since replaced it with a better switch, but it's still manual. Before I test the temp sender, is this manual switch going to prevent the sender from working properly? Or is it only the line to the computer that needs to be working correctly?

So, crank-hose replacement completely resolved it. Doesn't struggle at all any more. Also updated some wires so the fan will come on automatically as well as let me switch it on manually. 👍🏼 So far the temp has been staying within the correct zones. i think we're good 😁
