The needle on my fuel gauge on my K1100rs used to oscillate all over the place so I bought another gauge from ebay the needle now is calm but reads wrong, any way to calibrate it or any other suggestions

BMW made both damped and undamped ones. Sounds like your original one was undamped.
I've never hear of any way to calibrate them other than bending the arm of the fuel level sender inside the tank. Your "ping pong ball" might be leaking and have some fuel in it.
