Title: how hard is it to do a complete spline lube?

On a scale of 1 to 10  how hard is it to do a complete spine lube?
  I can do pretty much all other service, but would like to learn how to do this.

Well, you will get various responces based on everyone's personal mechanical aptitude and experience.
What may be easy, say a 1 or 2 for Dr.Duck , may be a 4 or 5 for me.
 
It's not really a hard job once you have done it once. It's more intimidating than mechanically hard.

Yabbut, Johnny, that's the shaft, which is a snap. He asked "complete spline lube". How about if you include the important third spline to lube: the clutch spline?

8-10 hours first time, 6 last time. Last time around I did not take off near as much stuff, I left all the rear
tail pieces on and just jacked it up to get the wheel out. Mostly just unbolting stuff and keeping up with where you put the bolts you pull out. Good tip on here about using 8-1.25 bolt with head removed to guide trans off and back on so you don't bend clutch rod.

It is more intimidating sounding than it is. To be honest, I never cracked the book exept looking up torque specs going back together. The best advice I can give is to take it easy, slow, mark (or remember) what came from where and have fun.

I am in the finnal stages of putting my K75S together after a spline lube. It is going together so fast that I have to intentionally slow down to convince myself all is well. Think of the K bike as a Leggo set, things can only go together one way unless a hammer is used.

My memory is so bad, I like to take pictures with my phone or a cheap digital camera to help remember how things looked before I take them apart.

Its very logical. Just follow the instructions, and make sure it is supported. Not a big deal at all.
