Probably super easy, but how do you remove the headlight ring and bucket from a K75 standard headlight to easily replace bulbs?

There's a screw on the bottom. Undo it, and pull from the bottom, then lift off the lens. The bulb is in the back. pull the connector, and there is a spring clip of some sort that holds the bulb. Pop it off, and swap the bulbs, without touching the glass of the bulb. I would clean it with rubbing alcohol or acetone before putting it in.
You should add relays (and a high wattage bulb if desired) while you are in there. Not a big deal to do.

I'll piggyback on this question. Any recommended better bulbs and relays to add? I've got the old low yellow bulb.

(I thought that screw was to adjust be beam angle . . . suppose that's done by simply adjusting the whole bucket + headlight in the mount).

The Eastern Beaver relay kit is highly recommended, well made, plug and play if you don't want to clip wires. Full discussion of the topic here;

IIRC, there is a screw on the side, that is for adjusting beam angle side to side.
