Welcome, Bupton.
The usual reference for this type of conversion is this video. There is a text synopsis of this video. Here's an extract from it and its translation.
Finding a modern tubeless spoke wheel is not easy. Such wheels are produced by the Italian company Kineo and BMW for the GS-series motorcycles. Both variants have a unique patented design and excellent quality, but we chose BMW wheels from R1100GS.

And a beautiful specimen it is, too. You indicate you've read about the 1150 rear wheel being used. Was that on a "fixed rear hub?" The 1200 has a paralever rear drive just like the 1150's. It looks like you might become a pioneer with this conversion. icon_cheers
